This noodle recipe is highly adaptable – swap the beef for chicken or pork or make it vegetarian by using cubed eggplant.

CHILLI UDON NOODLES, BEEF & MUSHROOMS
Prep: 10 minutes | Cook: 20 minutes | Serves 4
Ingredients
Stir-fry sauce
2 tbsp sweet chilli sauce
2 tbsp sriracha
3 tbsp dark soy sauce
2 cloves garlic, crushed
Noodles, beef & mushrooms
Peanut or sunflower oil
200g shitake or button mushrooms, sliced
250g green beans, cut in 3cm lengths
1 red capsicum, deseeded, cut in strips
4 spring onions, sliced
600g beef steak, cut in thin strips
400g udon noodles
1 tbsp toasted sesame seeds, to garnish
Fresh basil leaves, to garnish
Method
Stir-fry sauce: Stir all the ingredients plus ¼ cup water together in a bowl. Set aside.
Noodles, beef & mushrooms: Heat a little oil in a large wok or frying pan set over high heat. Add mushrooms, beans, capsicum and spring onions and stir-fry for 3-5 minutes. Remove to a large plate. Return pan to the heat and add a little more oil. Add the beef to the pan and stir-fry for 3-4 minutes, to brown. Return the vegetables to the pan. Add the noodles and the stir-fry sauce. Toss and stir-fry for 3-4 minutes until noodles are cooked and all ingredients are well coated in the sauce. Garnish with sesame seeds and basil and serve immediately.
